Taco Casserole
Great taco flavors in a tasty one dish meal. Wonderful for pot lucks or a fast meal. Make in advance and keep some in the freezer to be reheated.
12 ounces cooked soy meat substitute (or can use cooked ground turkey or chicken, 1 lb before cooking)
1 medium onion, chopped
1 bell pepper, chopped
2 teaspoons olive or canola oil
¼ cup taco seasoning
½ teaspoon onion salt
½ teaspoon garlic salt
1 cup taco salsa
1 cup canned corn
2 cups shredded cheddar cheese
Baked tortilla chips
Saute onion and bell pepper in olive oil until tender. Mix in other ingredients except cheese and chips. Layer a 2 quart casserole dish, starting with tortilla chips, then meat mixture and then cheese, making 2 layers. Bake at 350 degrees for about 25 minutes, until fully heated and cheese is melted.
Note: As a substitute for tortilla chips, take 4-5 corn tortillas and heat them in the microwave on a paper towel approximately 1 minute and 10 seconds each until crisp (adjust timing based on your microwave's power output). Break the tortillas into bite-sized pieces after crisping.
