Super Seafood Chowder
All the flavor of great chowder with the benefits of home cooked ingredients. No extra additives and you control the level of salt and seasoning according to your own taste. Delicious!
1 cup chopped green pepper
1 cup chopped onion
1 cup chopped celery
2 cloves minced garlic (or 1 tsp crushed garlic)
2 tablespoons olive oil
1 teaspoon curry powder
1 teaspoon Old Bay seasoning
½ teaspoon salt
2 cans low fat cream of celery soup
1 ½ cups low fat (1%) milk
3 6-oz cans of minced clams, crab meat, or tiny shrimp (or one can of each), or use 1 pound of fresh seafood if available
3 tablespoon dry cooking sherry
2 medium washed and unpeeled potatoes, cooked in microwave for 6 minutes to soften and diced
In a 3-4 quart soup pot, saute the green pepper, onion, celery, garlic and spices in olive oil until soft. Add remaining ingredients and simmer over low heat for 20-30 minutes, until all flavors are thoroughly blended. Can add a bit more milk if you prefer the chowder to be less thick.
