Pasta with Mushrooms, Arugula and Basil

Fresh basil and arugula give this dish a beautiful aroma and flavor.  Add shrimp or other light meat (chicken or turkey) if desired for a serving of protein and another layer of flavor.

8 oz. of your favorite pasta noodles, cooked and drained
¼ cup olive oil
4 ounces fresh basil, finely chopped, or 4 tablespoons dried basil
5 cups fresh arugula, coarsely chopped
2 cloves fresh minced garlic or 2 teaspoons crushed garlic
1½ cups sliced fresh mushrooms
1 pound cooked shrimp (optional)
Freshly grated parmesan cheese


In a large saucepan or skillet, heat olive oil together with garlic and basil.  Add mushrooms and arugula, and precooked shrimp or other meat if desired, stirring until heated through and tender.  Salt and pepper to taste.  Toss the pasta in the pan with the olive oil mixture.  Place on serving plates, sprinkle with parmesan cheese, and enjoy!
