Fresh Apple Cake
Try this treat for a healthy version of a sweet dessert with the great fiber and nutrition of apples, along with whole grain goodness.
1/4 cup soft canola oil margarine
2/3 cup brown sugar, packed
1 1/2 cups buttermilk
1 cup oat flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon cinnamon
1/2 teaspoon salt
2 1/2 cups apples, cored and finely chopped
TOPPING:
1/4 cup brown sugar, packed
2 teaspoons cinnamon
3 tablespoons finely chopped nuts (optional)
In large bowl, beat together margarine and sugar. Mix in buttermilk. Add flours, baking soda, baking powder, cinnamon, salt and apples and mix to combine. Spread evenly in lightly-greased cake pan or 9-inch square baking pan. Mix topping ingredients together and sprinkle over the cake. Bake at 350 degrees for 40 to 45 minutes or until toothpick inserted in center comes out clean.
