Enchilada Tortilla Soup

If you like enchiladas you're sure to enjoy this soup.  I think of it as a little bit of healthy ole in a bowl! 

Combine in blender:


2 cups mild red enchilada sauce, preferably organic with no artificial additives
2 cups vegetable broth
½ cup chopped onion
2 cloves fresh garlic
3 tablespoons chopped fresh cilantro
½ cup baked tortilla chips (or corn tortillas that have been microwaved until crisp, then broken up into pieces)

Blend first 5 ingredients in a blender on medium speed until well blended.  Add tortilla chips and blend on low speed until coarsely blended.  Pour into soup cups and microwave for several minutes until heated through.  Can also add some black beans and/or canned corn into the mixture after blending for variety.
