"Dirty Rice" With Black Eyed Peas

A very tasty version of this traditional southern dish.  Round it out with cooked greens or any kind of brightly colored veggies--yams, beets, green beans, or your choice of mixed veggies.  It will hit the spot!

8 ounces veggie sausage, chopped (can use 6 oz of precooked breakfast sausage)

1 tablespoon olive oil
1 medium onion, chopped (about 1 cup)
1 medium  tomato, chopped (about 1/2 cup)
1 small green pepper, diced (about 1/2 cup)
1 teaspoon minced garlic
1 cup quick cooking brown rice, uncooked

1 16 oz can black eyed peas, with liquid
3 tablespoons tomato paste
1 cup vegetable broth
1 teaspoon thyme
Salt and pepper to taste

In a medium sauce pan, brown sausage in olive oil, then add onion and sauté until soft.  Stir in remaining ingredients and bring to a boil.  Simmer until rice is done, about 20 minutes.
