Chewy Oatmeal Squares

Quick and easy to make, and satisfies a sweet tooth without resorting to refined carbs or white sugar.  Oats contribute to daily fiber and nutrition in the diet, and adding nuts will increase the protein and healthy fats to fill you up and not out.  Canola oil gives you healthy dietary fat as well.

½ cup canola oil 
3/4 cup firmly packed brown sugar
½ cup applesauce
1 teaspoon vanilla extract
2 cups quick-cooking or steel-cut oats
1/3 cup chopped walnuts or pecans (optional) 
½ teaspoon baking powder
1½ teaspoons ground cinnamon

Cooking spray

Preheat oven to 325 degrees.  Spray an 8-inch square pan with cooking spray.  In a bowl combine oil, brown sugar, applesauce and vanilla.  Add oats, nuts, baking powder and cinnamon.  Mix until blended.  Press mixture evenly into prepared pan.  Bake 20 to 25 minutes, until edges are golden brown.  Cut into squares while hot.  Cool before serving.
