Black Bean Quesadillas
Quesadillas make a great light meal or snack. Along with a crisp green salad, they will hit the spot for lunch or dinner, or late night munching. Hey, have some for breakfast along with your omelet for a hearty start to the day! Ole!
4 whole grain tortillas
1 cup black beans, drained
1 red pepper, chopped
12 small mushrooms, sliced
1 cup fresh spinach, chopped
2 cups cheddar cheese, shredded
1 cup fresh salsa
2 avocados, sliced or mashed with garlic salt
Light sour cream (optional)
Cooking spray
Coat a small saute pan with cooking spray and set to medium heat. Add black beans, peppers, mushrooms and spinach, and cook for about 3-5 minutes. Next coat a skillet with cooking spray on medium heat and lay a tortilla flat in the skillet. Sprinkle one half with cheese. Spoon bean mixture over the cheese. Then add more cheese and fold tortilla over the mixture. Flip after about 2 minutes and cook so that both sides are lightly browned and cheese is melted. Slice in half. Repeat with remaining tortillas. Serve with salsa, avocado and sour cream, if desired.
Note: If you like it a bit spicier, start with spicy black beans or add some chopped green chiles or jalapenos to the mixture. You may also try black refried beans which have some added spices.
